A recipe full of fiber hardly a gram of fat!
6 dried apricots
250ml (9 fluid oz) orange juice
400g (14 oz) dried fruit medley of sultanas, raisins, and currants
1 tsp mixed spice
1 tsp ground cinnamon
260 (9 oz) cold mashed pumpkin
200 grams ( 1.5 cups) all-purpose flour
2 teaspoons baking powder
Place the apricots and juice in a saucepan and bring to the boil. Leave to soften and cool and then blend until smooth.
Return the blended apricots to the saucepan and add mixed fruit and spice.
Bring back to the boil and turn off the heat. Transfer to a mixing bowl and cool completely.
Preheat oven to 160 C / 315 F (Gas 2-3)
Spray a 4 x 8-inch loaf tin with oil and line with baking paper.
Add the pumpkin to the fruit mix and stir thoroughly. Add the flour and the baking powder and mix well.
Bake for 1 hour and 20 minutes, covering the loaf with foil for the last 45 minutes. Turn onto a wire rack and cool before serving.
