Paelo Diet Choc Chip Cookies

I’m not a professional chef, but after I make these delicious Paleo Diet Cookies you might think I am.


Last week I had sweet tooth, and I almost went to the store and just grabbed the break and bake cookies.


But then I thought, hang on, I can get away with this and not feel half as bad.


All I got to do is just make them Paleo.

To begin you need two bowls! One for the dry, and the other for wet ingredients. Oh, before I forget, preheat your oven to 350 degrees.

We’re going to start with the dry ingredients:

  • Coconut Flour,
  • Baking Soda,
  • Almond Flour and, Salt


Starting with the Almond Flour you’re going to need one cup. One quarter of a cup of Coconut Flour, a teaspoon of Baking Soda and a quarter of a teaspoon of salt.

Just give the bowl of dry ingredients a quick little stir. 

That was simple and we’re doing so well!


In your wet ingredients bowl, we’re going to start with Organic Dark Brown Sugar three-quarters of a cup of this.

We need to stop here and consider your Paleo Philosophy.


The Paleo Diet purists don’t allow sugar at all.


Here are some alternatives. Mix the Dark Brown Sugar with either molasses or black strap molasses. The ratio is 4 cups sugar to 1/4 cup molasses but mix it to your taste. Our recipe needs 3/4 cup of Dark Brown Sugar so use 1/2 cup with 1 TB molasses.



Alternatively, puree dates into a paste after soaking for a few hours and then whizzing in the food processor.  I’m not sure of the substitutions, I’ll write another awesome article about this. If you can’t wait until then, try this link for how to replace sugar. 


You could use honey but it can make the mixture a bit sloppy. Try it for the preferred Paleo Diet sweetener.


Now you have sorted out the sweetness, it’s time to add some fats! The recipe calls for six tablespoons of coconut oil or butter.


I don’t like coconut oil that much, so I’m going to do three tablespoons of coconut oil and three tablespoons of butter.

Okay, now we’ve got our fats we’re going to mix them together with a hand-mixer.


Beat this together at a medium speed for one minute until all of it is combined.

Into the wet ingredients, add the following.

  • 1/2 teaspoon vanilla extract and,
  • six tablespoons of Almond Butter. 

Beat this until it’s all mixed up. Next, we got to throw in, the egg.

Stir in our mixture until it’s smooth and your dough looks like a salted caramel.

We’re going to add in our chocolate chips. I have Dark Chocolate Baking Chips. 67% Cacao.

Next, grab two baking sheets and parchment paper. The reason why you need two baking sheets is that they’re going to spread out.


For portions control and kids eating masses of them roll your ball small. Otherwise, as large as you want.


Smash the balls down with a fork, throw them in the oven!


The magic number is 16 minutes and they will come out perfect every time.


If you’re a big bakery fan, and you like bakery style cookies. This is the holy grail of it. I doused them in salt.
